  1. Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Trim the ends off the zucchini. Slice them into rounds approximately 1/4 inch (6mm) thick. Consistency in slicing is crucial for even cooking.
  3. Place the sliced zucchini in a large mixing bowl. Drizzle with olive oil. Sprinkle evenly with oregano, thyme, garlic powder, salt, and pepper. Toss gently until every slice is lightly coated.
  4. Transfer the seasoned slices to the lined baking sheet, ensuring they are arranged in a single layer. Do not allow them to overlap.
  5. Place the tray in the preheated oven and bake for 15 minutes.
  6. Carefully remove the tray. Using tongs, flip each zucchini slice over. If using Parmesan, sprinkle it lightly over the top of the slices now.
  7. Return the tray to the oven and bake for an additional 5–10 minutes, or until the edges are nicely browned and the zucchini is tender but not mushy.
  8. Remove from the oven. Garnish immediately with fresh parsley and serve warm.
