Instructions:
- Press the Tofu: Wrap the block in paper towels or tea towels. Place between two plates or cutting boards and apply significant weight (like a few heavy cookbooks) for at least 30 minutes to remove as much water as possible.
- Preheat & Prepare: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or, ideally, place a wire rack onto the lined sheet.
- Cube the Tofu: Once pressed, pat the tofu dry again. Cut the block into even 1-inch (2.5 cm) cubes.
- Create the Coating: In a medium bowl, whisk together the cornflour, nutritional yeast (if using), smoked paprika, garlic powder, salt, and pepper.
- Coat the Tofu: Add the tofu cubes to the coating mixture. Drizzle with the oil and gently toss everything together until every cube is evenly dusted and lightly coated.
- Arrange for Baking: Spread the coated tofu cubes onto the prepared wire rack or baking sheet in a single layer, ensuring there is space between each piece.
- Bake: Bake for 15 minutes.
- Flip & Finish: Carefully flip each piece of tofu. Return to the oven and bake for another 15–20 minutes, or until golden brown and distinctly crisp on all sides.
- Serve: Remove from the oven and serve immediately, or toss lightly with your favorite glaze/sauce while still hot.
