Ingredients:
- 1 cup (100g) panko breadcrumbs
- ½ cup (50g) grated Parmesan cheese
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15g) fresh parsley, finely chopped
- 1 tablespoon (15g) fresh dill, finely chopped
- Zest of 1 lemon
- Salt and pepper, to taste
- 4 (6oz/170g) cod fillets, skinless and boneless
- 2 tablespoons (30ml) Dijon mustard
Instructions:
- Preheat the Oven: Set your oven to 425°F (220°C).
- Prepare the Baking Sheet: Line the baking sheet with parchment paper for easy cleanup.
- Make the Crust: In a bowl, combine panko breadcrumbs, Parmesan cheese, olive oil, parsley, dill, lemon zest, salt, and pepper. Mix well until all ingredients are evenly coated.
- Prepare the Cod: Pat the cod fillets dry with a paper towel. Season both sides with salt and pepper and brush the top of each fillet with Dijon mustard.
- Coat the Cod: Press the breadcrumb mixture onto the mustard-coated side of each fillet, ensuring it's well-covered.
- Bake the Cod: Place the fillets crust-side up on the prepared baking sheet. Bake for 15-20 minutes until the crust is golden brown and the fish flakes easily with a fork.
- Serve: Remove from the oven and let sit for a few minutes before serving.
