Ingredients:

  • 1 cup kosher salt
  • 1/2 cup brown sugar
  • 2 gallons water
  • 1 whole turkey (12-14 lbs, thawed)
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon black pepper
  • 1 tablespoon smoked paprika
  • 2 teaspoons cayenne pepper (optional)
  • 4-5 gallons peanut oil

Instructions:

  1. Dissolve salt and sugar in water over heat; cool completely.
  2. Submerge the turkey in the brine; refrigerate for 12 hours.
  3. Mix garlic powder, onion powder, black pepper, smoked paprika, and cayenne in a bowl.
  4. Remove turkey from brine, rinse, and pat dry thoroughly.
  5. Rub the seasoning mix all over and inside the turkey; let it rest for 30 minutes.
  6. Heat oil in a fryer pot to 350°F (175°C).
  7. Carefully lower the turkey into the hot oil using the rack; cook for approximately 3-4 minutes per pound until the internal temperature reaches 165°F (74°C).
  8. Remove turkey from oil and let it rest for 20-30 minutes before carving.
  9. Carve and enjoy your crispy, flavorful turkey!
