Ingredients:
- 1 lb (450g) white fish fillets (cod, haddock, or pollock), cut into 3-4 inch strips
- ½ cup (60g) all-purpose flour
- 2 large eggs
- 1 tbsp (15ml) water or milk
- 1 cup (100g) panko breadcrumbs
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- Cooking spray (preferably olive oil or avocado oil)
Instructions:
- Prepare the breading stations: In the first bowl, place the all-purpose flour. In the second bowl, whisk together eggs and water or milk until combined. In the third bowl, combine panko breadcrumbs, paprika, garlic powder, onion powder, salt, and black pepper.
- Bread the fish strips: Pat fish strips dry with paper towels. Dredge each fish piece in flour, shaking off excess. Dip into the egg wash, letting any excess drip off. Coat evenly with the seasoned panko mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
- Air fry the fish sticks: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place fish sticks in a single layer without touching for air circulation. Spray tops lightly with cooking spray. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 145°F/63°C).
- Serve immediately with your choice of dips and sides.
