Ingredients:

  • 2 cups penne rigate pasta (about 200g)
  • 1 jar (15 oz or 425g) Ragu cheddar sauce
  • 1/2 cup diced green pepper (about 1 small green pepper)
  • 1/2 cup diced yellow pepper (about 1 small yellow pepper)
  • 1/2 cup diced red pepper (about 1 small red pepper)
  • 1/2 cup diced onion (about 1 small onion)
  • 1 package (16 oz or 454g) medium frozen shrimp, rinsed and thawed
  • 2 tbsp chili powder
  • 2 tbsp Old Bay seafood and meat seasoning
  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)

Instructions:

  1. Boil water in a large pot. Add penne rigate and cook for 11 minutes until al dente.
  2. While pasta cooks, heat a bit of oil in a sauté pan over medium heat. Add diced onions and bell peppers, season with salt and pepper, and sauté until softened (about 4-5 minutes).
  3. Once peppers are soft, add rinsed shrimp, chili powder, and Old Bay seasoning. Cook until shrimp turn pink and are fully cooked (about 4-5 minutes).
  4. Strain cooked pasta and return it to the pot. Add the Ragu cheddar sauce and the cooked peppers and shrimp into the pot.
  5. Cook over low heat for 5 minutes, stirring every 2 minutes until heated through. Remove from heat and serve hot.
