Ingredients:
- 1 lb (450g) Fettuccine pasta
- 1 tbsp (15g) Kosher salt
- 1 lb (450g) Large shrimp, peeled and deveined
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
- 1 tbsp (14g) Olive oil
- 4 tbsp (56g) Unsalted butter
- 4 cloves (20g) Garlic, minced
- 2 tbsp (30g) Shallots, finely diced
- 1/2 cup (120ml) Dry white wine
- 1 cup (240ml) Heavy cream
- 3/4 cup (75g) Freshly grated Parmesan cheese
- 1 tbsp (15ml) Fresh lemon juice
- 2 tbsp (8g) Fresh parsley, chopped
Instructions:
- Bring a large pot of heavily salted water to a rolling boil. Add fettuccine and cook until al dente. Reserve 1 cup of pasta water before draining.
- Pat shrimp dry with paper towels and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear shrimp quickly until just cooked through, then remove from the pan and set aside to prevent overcooking.
- In the same skillet, melt butter. Add minced garlic and diced shallots, sautéing until fragrant.
- Pour in the white wine to deglaze the pan, scraping up the browned bits from the bottom. Simmer until reduced by half.
- Stir in heavy cream and simmer gently. Whisk in Parmesan cheese and lemon juice until the sauce is smooth and emulsified.
- Toss the cooked fettuccine and seared shrimp into the sauce. Add reserved pasta water as needed to reach a glossy consistency.
- Garnish with chopped fresh parsley before serving.
