Ingredients:
- 1 lb medium shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 3 tbsp fresh dill, finely chopped
- 1 small clove garlic, minced
- 1/4 tsp salt
- 1/8 tsp white pepper
- 1/2 cup celery, finely diced
- 2 tbsp red onion, minced
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the shrimp dry with paper towels to ensure a better sear.
- Toss shrimp with olive oil, lemon juice, salt, and pepper.
- Heat a skillet over medium-high heat, add shrimp in a single layer, and sear for 2–3 minutes per side until opaque and firm.
- Transfer shrimp to a plate and let them cool completely.
- In a medium bowl, whisk together mayonnaise, sour cream, lemon juice, and lemon zest until smooth and pale yellow.
- Stir the minced garlic, chopped dill, salt, and white pepper into the dressing until evenly distributed.
- Fold the cooled shrimp, diced celery, minced red onion, and parsley into the dressing.
- Gently toss until all ingredients are well-coated and the dressing is evenly distributed.
