Ingredients:

  • 1 lb medium shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 tbsp fresh dill, finely chopped
  • 1 small clove garlic, minced
  • 1/4 tsp salt
  • 1/8 tsp white pepper
  • 1/2 cup celery, finely diced
  • 2 tbsp red onion, minced
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the shrimp dry with paper towels to ensure a better sear.
  2. Toss shrimp with olive oil, lemon juice, salt, and pepper.
  3. Heat a skillet over medium-high heat, add shrimp in a single layer, and sear for 2–3 minutes per side until opaque and firm.
  4. Transfer shrimp to a plate and let them cool completely.
  5. In a medium bowl, whisk together mayonnaise, sour cream, lemon juice, and lemon zest until smooth and pale yellow.
  6. Stir the minced garlic, chopped dill, salt, and white pepper into the dressing until evenly distributed.
  7. Fold the cooled shrimp, diced celery, minced red onion, and parsley into the dressing.
  8. Gently toss until all ingredients are well-coated and the dressing is evenly distributed.
