Ingredients:

  • 8 ounces (225g) imitation crab meat, flaked or chopped
  • 1/2 cup (120ml) mayonnaise
  • 1/4 cup (60ml) finely chopped celery
  • 1/4 cup (60ml) finely chopped red onion
  • 2 hard-boiled eggs, chopped
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 tablespoon (15ml) Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon hot sauce (like Tabasco), or to taste
  • 1/4 teaspoon black pepper
  • Pinch of salt, or to taste
  • Optional: 2 tablespoons chopped fresh dill or parsley, for garnish

Instructions:

  1. Flake or chop the imitation crab meat into bite-sized pieces.
  2. In a mixing bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, Old Bay seasoning, hot sauce, salt, and pepper.
  3. Gently fold in the chopped celery, red onion, and hard-boiled eggs.
  4. Add the prepared imitation crab meat to the bowl.
  5. Gently fold everything together until well combined. Be careful not to overmix!
  6. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
  7. Before serving, garnish with chopped dill or parsley (if using).
