Ingredients:
- 8 ounces (225g) canned or fresh crab meat, picked over for shells
- 1/4 cup (60ml) full-fat mayonnaise
- 2 tablespoons finely chopped fresh celery
- 1 tablespoon finely chopped red onion
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon Old Bay seasoning (optional)
- Salt and freshly ground black pepper to taste
- 1 tablespoon chopped fresh parsley or chives, for garnish (optional)
Instructions:
- Gently flake the crab meat with a fork, being careful not to break it up too much. Check for any stray pieces of shell.
- In a mixing bowl, combine the mayonnaise, celery, red onion, lemon juice, Dijon mustard, and Old Bay seasoning (if using). Whisk until smooth.
- Gently fold the crab meat into the mayonnaise mixture until just combined. Be careful not to overmix, as this can make the crab meat mushy.
- Season with salt and freshly ground black pepper to taste.
- Cover the bowl with plastic wrap and refrigerate for at least 20 minutes to allow the flavors to meld.
- Garnish with fresh parsley or chives, if desired. Serve immediately.
