Ingredients:

  • 8 ounces (225g) canned or fresh crab meat, picked over for shells
  • 1/4 cup (60ml) full-fat mayonnaise
  • 2 tablespoons finely chopped fresh celery
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Old Bay seasoning (optional)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley or chives, for garnish (optional)

Instructions:

  1. Gently flake the crab meat with a fork, being careful not to break it up too much. Check for any stray pieces of shell.
  2. In a mixing bowl, combine the mayonnaise, celery, red onion, lemon juice, Dijon mustard, and Old Bay seasoning (if using). Whisk until smooth.
  3. Gently fold the crab meat into the mayonnaise mixture until just combined. Be careful not to overmix, as this can make the crab meat mushy.
  4. Season with salt and freshly ground black pepper to taste.
  5. Cover the bowl with plastic wrap and refrigerate for at least 20 minutes to allow the flavors to meld.
  6. Garnish with fresh parsley or chives, if desired. Serve immediately.
