Ingredients:
- 4 (6 oz) grouper fillets
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- 8 oz lump blue crab meat, drained
- 3 tbsp mayonnaise
- 1 tbsp fresh lemon juice
- 1/4 cup Panko breadcrumbs
- 2 tbsp grated Parmesan cheese
- 1 tsp Old Bay seasoning
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Pat the 4 grouper fillets completely dry with paper towels. Brush the fillets with olive oil and season evenly with 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp smoked paprika.
- In a small mixing bowl, combine 3 tbsp mayonnaise, 1 tbsp fresh lemon juice, 1 tsp Old Bay seasoning, and 2 tbsp grated Parmesan cheese.
- Gently fold in 8 oz lump blue crab meat and 1/4 cup Panko breadcrumbs using a silicone spatula until just combined. Stir in 1 tbsp chopped fresh parsley.
- Place the seasoned fillets on the prepared baking sheet. Spoon approximately 1/4 cup of the crab mixture onto each fillet, pressing down gently to secure the topping.
- Bake for 10–12 minutes. Turn the oven to broil for the final 2 minutes until the topping is dark golden and crisp.
- Verify the fish is done when the flesh flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
