Ingredients:
- 2 lbs crab apples
- 4 cups water
- 1 tbsp lemon juice
- 3 cups granulated sugar
- 1 pinch salt
Instructions:
- Combine the cleaned crab apples and water in a large pot.
- Simmer over medium heat for 20–30 minutes until the fruit is soft and has released its juices.
- Strain the mixture through a fine-mesh sieve into a bowl; let gravity do the work for 10 minutes to ensure crystal-clear jelly.
- Measure the extracted juice. For every 1 cup of juice, add 1 cup of granulated sugar.
- Stir in the lemon juice and salt.
- Bring the mixture to a rolling boil over high heat, stirring constantly to ensure the sugar dissolves completely.
- Once the mixture reaches 220°F (104°C), perform the wrinkle test by dropping a small amount of jelly onto a chilled saucer and pushing it with a finger after 30 seconds to check for the set.
