Ingredients:
- 2 tbsp vegetable oil
- 1 cup onion, diced
- 1 cup green bell pepper, diced
- 1 cup celery, diced
- 3 cloves garlic, minced
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Cajun seasoning
- 1 can diced tomatoes with green chilies, undrained
- 4 cups chicken broth
- 2 cups okra, sliced
- 1 bay leaf
- 1/4 cup chopped fresh parsley
- 2 green onions, sliced (for garnish)
Instructions:
- In a large pot or Dutch oven, heat vegetable oil over medium heat.
- Add diced onions, bell peppers, and celery; cook until softened (about 5-7 minutes).
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add chicken pieces, salt, black pepper, and Cajun seasoning; sauté until chicken is browned (about 5 minutes).
- Stir in diced tomatoes, followed by chicken broth; mix well.
- Bring to a boil, then add sliced okra and bay leaf. Reduce heat and simmer for 30 minutes.
- Remove bay leaf, stir in chopped parsley, adjust seasoning if necessary. Serve garnished with green onions.
