Ingredients:

  • 2 tbsp vegetable oil
  • 1 cup onion, diced
  • 1 cup green bell pepper, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Cajun seasoning
  • 1 can diced tomatoes with green chilies, undrained
  • 4 cups chicken broth
  • 2 cups okra, sliced
  • 1 bay leaf
  • 1/4 cup chopped fresh parsley
  • 2 green onions, sliced (for garnish)

Instructions:

  1. In a large pot or Dutch oven, heat vegetable oil over medium heat.
  2. Add diced onions, bell peppers, and celery; cook until softened (about 5-7 minutes).
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add chicken pieces, salt, black pepper, and Cajun seasoning; sauté until chicken is browned (about 5 minutes).
  5. Stir in diced tomatoes, followed by chicken broth; mix well.
  6. Bring to a boil, then add sliced okra and bay leaf. Reduce heat and simmer for 30 minutes.
  7. Remove bay leaf, stir in chopped parsley, adjust seasoning if necessary. Serve garnished with green onions.
