Ingredients:

  • 3 (6 oz / 170g) Cod fillets
  • 3 tbsp (45g) Mayonnaise
  • 1 tsp (5ml) Lemon juice
  • 1/2 tsp (3g) Garlic powder
  • 1/2 cup (50g) Unsweetened shredded coconut
  • 1/4 cup (30g) Panko breadcrumbs
  • 1/2 tsp (3g) Salt
  • 1/4 tsp (1g) Black pepper
  • 1/4 tsp (1g) Paprika
  • Non-stick cooking spray (as needed)

Instructions:

  1. Use paper towels to press firmly on all sides of the cod fillets to remove surface moisture.
  2. In a shallow bowl, whisk together mayonnaise, lemon juice, and garlic powder to create the binder.
  3. In a second shallow bowl, combine unsweetened shredded coconut, panko breadcrumbs, salt, pepper, and paprika.
  4. Dip each cod fillet into the binder, ensuring a thin, even layer covers the top and sides.
  5. Press the fillet firmly into the coconut mixture using your palms to ensure the crust adheres tightly.
  6. Lightly spray the air fryer basket with non-stick cooking spray.
  7. Place fillets in the basket, leaving space between them for air circulation, and cook at 400°F (200°C) for 10–12 minutes until the coconut is mahogany-colored and the fish flakes easily.
