Ingredients:
- 3 (6 oz / 170g) Cod fillets
- 3 tbsp (45g) Mayonnaise
- 1 tsp (5ml) Lemon juice
- 1/2 tsp (3g) Garlic powder
- 1/2 cup (50g) Unsweetened shredded coconut
- 1/4 cup (30g) Panko breadcrumbs
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
- 1/4 tsp (1g) Paprika
- Non-stick cooking spray (as needed)
Instructions:
- Use paper towels to press firmly on all sides of the cod fillets to remove surface moisture.
- In a shallow bowl, whisk together mayonnaise, lemon juice, and garlic powder to create the binder.
- In a second shallow bowl, combine unsweetened shredded coconut, panko breadcrumbs, salt, pepper, and paprika.
- Dip each cod fillet into the binder, ensuring a thin, even layer covers the top and sides.
- Press the fillet firmly into the coconut mixture using your palms to ensure the crust adheres tightly.
- Lightly spray the air fryer basket with non-stick cooking spray.
- Place fillets in the basket, leaving space between them for air circulation, and cook at 400°F (200°C) for 10–12 minutes until the coconut is mahogany-colored and the fish flakes easily.
