Ingredients:

  • 4 (6 oz / 170g) tilapia fillets
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1 tbsp fresh lemon juice
  • 1 lemon, thinly sliced into rounds
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper.
  2. Use paper towels to firmly pat every tilapia fillet dry on both sides to ensure a better crust.
  3. In a small bowl, whisk together the olive oil, lemon juice, smoked paprika, garlic powder, oregano, salt, and pepper.
  4. Brush the seasoning mixture evenly over the top and sides of each fillet.
  5. Place the fillets on the baking sheet and top each one with a fresh lemon slice.
  6. Bake on the center rack for 10–12 minutes until the fish is opaque and flakes easily with a fork.
  7. Remove from the oven, sprinkle with fresh chopped parsley, and let the fish rest for 2 minutes before serving.
