Ingredients:

  • 8 cups water
  • 1 whole lemon, sliced
  • 1 bay leaf
  • 1 tbsp salt
  • 1 tsp black peppercorns
  • 1 lb medium shrimp, peeled and deveined
  • 1 tsp Old Bay or Cajun seasoning
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 2 ribs celery, finely diced
  • 2 tbsp red onion, minced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • salt and pepper to taste

Instructions:

  1. Combine water, sliced lemon, bay leaf, salt, and peppercorns in a pot. Bring to a boil over high heat.
  2. Turn off the heat completely.
  3. Gently slide the shrimp into the hot water. Let them steep for 3–5 minutes until they turn opaque and a pearly pink.
  4. Use a slotted spoon to remove shrimp immediately and place them in a sieve.
  5. Rinse briefly with cold water to stop the cooking process.
  6. Pat the shrimp completely dry with paper towels.
  7. In a large mixing bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Worcestershire sauce, and Dijon mustard until smooth.
  8. Fold in the finely diced celery, minced red onion, chopped dill, and chopped parsley.
  9. Add the chilled shrimp to the dressing and toss gently to coat evenly.
  10. Season with salt and pepper to taste and refrigerate for 1 hour to allow flavors to meld.
