Ingredients:
- 8 cups water
- 1 whole lemon, sliced
- 1 bay leaf
- 1 tbsp salt
- 1 tsp black peppercorns
- 1 lb medium shrimp, peeled and deveined
- 1 tsp Old Bay or Cajun seasoning
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 2 ribs celery, finely diced
- 2 tbsp red onion, minced
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
- salt and pepper to taste
Instructions:
- Combine water, sliced lemon, bay leaf, salt, and peppercorns in a pot. Bring to a boil over high heat.
- Turn off the heat completely.
- Gently slide the shrimp into the hot water. Let them steep for 3–5 minutes until they turn opaque and a pearly pink.
- Use a slotted spoon to remove shrimp immediately and place them in a sieve.
- Rinse briefly with cold water to stop the cooking process.
- Pat the shrimp completely dry with paper towels.
- In a large mixing bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Worcestershire sauce, and Dijon mustard until smooth.
- Fold in the finely diced celery, minced red onion, chopped dill, and chopped parsley.
- Add the chilled shrimp to the dressing and toss gently to coat evenly.
- Season with salt and pepper to taste and refrigerate for 1 hour to allow flavors to meld.
