Ingredients:
- 1 pound round steak (about 1-inch thick)
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 2 large eggs
- 1/2 cup buttermilk
- 1/2 cup vegetable oil, for frying
- 1/4 cup all-purpose flour (for gravy)
- 2 cups whole milk
- Salt and black pepper to taste
Instructions:
- Pound the steak with a meat mallet to tenderize it and create an even thickness.
- Combine flour, garlic powder, onion powder, paprika, salt, and pepper in a shallow bowl.
- In another bowl, whisk together eggs and buttermilk until smooth.
- Dredge each steak in the seasoned flour, dip into the egg mixture, and then coat again in the flour. Place on a wire rack and chill for 30 minutes.
- Heat vegetable oil in a heavy skillet over medium-high heat until shimmering.
- Carefully add steaks and fry until golden brown on both sides (about 4-5 minutes per side). Remove and drain on paper towels.
- In the skillet, whisk in the flour to the remaining oil, cooking for about 1 minute.
- Gradually add the milk while whisking continuously to avoid lumps. Cook until thickened, seasoning with salt and pepper.
- Plate the chicken fried steak and generously ladle cream gravy over the top.
