Ingredients:

  • 1 pound round steak (about 1-inch thick)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil, for frying
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups whole milk
  • Salt and black pepper to taste

Instructions:

  1. Pound the steak with a meat mallet to tenderize it and create an even thickness.
  2. Combine flour, garlic powder, onion powder, paprika, salt, and pepper in a shallow bowl.
  3. In another bowl, whisk together eggs and buttermilk until smooth.
  4. Dredge each steak in the seasoned flour, dip into the egg mixture, and then coat again in the flour. Place on a wire rack and chill for 30 minutes.
  5. Heat vegetable oil in a heavy skillet over medium-high heat until shimmering.
  6. Carefully add steaks and fry until golden brown on both sides (about 4-5 minutes per side). Remove and drain on paper towels.
  7. In the skillet, whisk in the flour to the remaining oil, cooking for about 1 minute.
  8. Gradually add the milk while whisking continuously to avoid lumps. Cook until thickened, seasoning with salt and pepper.
  9. Plate the chicken fried steak and generously ladle cream gravy over the top.
