Ingredients:
- 1 pound dried navy or great northern beans
- 1/2 pound bacon, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup molasses
- 1/4 cup brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon mustard powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 cups water for cooking
Instructions:
- Rinse beans under cold water. Place in a large bowl, cover with water, and soak overnight (or at least 8 hours).
- In a Dutch oven, cook diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside.
- In the bacon drippings, add chopped onion and garlic. Sauté until onion is translucent.
- Add soaked and drained beans, cooked bacon, molasses, brown sugar, apple cider vinegar, mustard powder, smoked paprika, and water to the pot. Stir well.
- Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, stirring occasionally, until beans are tender.
- Season with salt and pepper to taste. Cook uncovered for an additional 15 minutes to thicken the sauce if needed.
- Serve warm alongside your favorite dishes!
