Ingredients:

  • 1 pound dried navy or great northern beans
  • 1/2 pound bacon, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup molasses
  • 1/4 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 cups water for cooking

Instructions:

  1. Rinse beans under cold water. Place in a large bowl, cover with water, and soak overnight (or at least 8 hours).
  2. In a Dutch oven, cook diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside.
  3. In the bacon drippings, add chopped onion and garlic. Sauté until onion is translucent.
  4. Add soaked and drained beans, cooked bacon, molasses, brown sugar, apple cider vinegar, mustard powder, smoked paprika, and water to the pot. Stir well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, stirring occasionally, until beans are tender.
  6. Season with salt and pepper to taste. Cook uncovered for an additional 15 minutes to thicken the sauce if needed.
  7. Serve warm alongside your favorite dishes!
