Ingredients:

  • 1 lb raw medium shrimp, peeled and deveined
  • 3 stalks celery, finely diced
  • 1/4 cup red onion, minced
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp fresh lemon juice
  • 1 tsp Old Bay seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. If using raw shrimp, bring a pot of water to a simmer with a pinch of salt. Drop in the shrimp and cook for 2–3 minutes until they are opaque and curled into a 'C' shape. Immediately drain them in a colander and rinse with ice-cold water to stop the cooking process. Pat them dry with a paper towel.
  2. In a large mixing bowl, combine the mayonnaise, sour cream, lemon juice, Old Bay, salt, and pepper. Whisk until the mixture is smooth and velvety.
  3. Add the chilled shrimp, diced celery, red onion, and fresh parsley to the bowl. Using a spatula, gently fold the ingredients together until the shrimp are evenly coated and the vegetables are distributed.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
