Ingredients:
- 1 lb raw medium shrimp, peeled and deveined
- 3 stalks celery, finely diced
- 1/4 cup red onion, minced
- 2 tbsp fresh parsley, chopped
- 1/2 cup mayonnaise
- 1 tbsp sour cream
- 1 tbsp fresh lemon juice
- 1 tsp Old Bay seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- If using raw shrimp, bring a pot of water to a simmer with a pinch of salt. Drop in the shrimp and cook for 2–3 minutes until they are opaque and curled into a 'C' shape. Immediately drain them in a colander and rinse with ice-cold water to stop the cooking process. Pat them dry with a paper towel.
- In a large mixing bowl, combine the mayonnaise, sour cream, lemon juice, Old Bay, salt, and pepper. Whisk until the mixture is smooth and velvety.
- Add the chilled shrimp, diced celery, red onion, and fresh parsley to the bowl. Using a spatula, gently fold the ingredients together until the shrimp are evenly coated and the vegetables are distributed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
