Ingredients:
- 1 cup High-Quality Mayonnaise (full-fat)
- 1/4 cup Chili Sauce (e.g., Heinz or similar, or good quality ketchup)
- 1 Tablespoon Prepared Horseradish (white, drained)
- 1 Tablespoon Fresh Lemon Juice
- 1 teaspoon Worcestershire Sauce
- 1/2 teaspoon Hungarian Paprika (or standard sweet paprika)
- 1/4 teaspoon Fine Sea Salt (or to taste)
- 1/4 teaspoon Freshly Ground Black Pepper (or to taste)
- 1 Tablespoon Fresh Chives, finely minced
- Pinch of Cayenne Pepper (optional, for heat)
Instructions:
- Measure the mayonnaise and chili sauce precisely. If using chives, mince them finely. Juice the lemon and measure the horseradish and Worcestershire sauce.
- In the medium mixing bowl, combine the measured mayonnaise and chili sauce. Whisk gently until the mixture is uniform in colour and texture.
- Add the prepared horseradish, fresh lemon juice, and Worcestershire sauce. Whisk vigorously for 30–60 seconds until the mixture is perfectly smooth and has a slight sheen. Ensure there are no streaks of unblended mayo remaining.
- Sprinkle in the paprika, sea salt, black pepper, and the optional pinch of cayenne pepper. Using a rubber spatula, gently fold in the minced chives. Taste Test: Adjust seasoning (salt, lemon juice, or horseradish) if needed.
- Transfer the dressing to an airtight container. Refrigerate for a minimum of 30 minutes, but ideally 1 to 2 hours. This chilling time allows the flavors to properly marry. Give it a final stir just before serving.
