Ingredients:

  • 1 cup High-Quality Mayonnaise (full-fat)
  • 1/4 cup Chili Sauce (e.g., Heinz or similar, or good quality ketchup)
  • 1 Tablespoon Prepared Horseradish (white, drained)
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Worcestershire Sauce
  • 1/2 teaspoon Hungarian Paprika (or standard sweet paprika)
  • 1/4 teaspoon Fine Sea Salt (or to taste)
  • 1/4 teaspoon Freshly Ground Black Pepper (or to taste)
  • 1 Tablespoon Fresh Chives, finely minced
  • Pinch of Cayenne Pepper (optional, for heat)

Instructions:

  1. Measure the mayonnaise and chili sauce precisely. If using chives, mince them finely. Juice the lemon and measure the horseradish and Worcestershire sauce.
  2. In the medium mixing bowl, combine the measured mayonnaise and chili sauce. Whisk gently until the mixture is uniform in colour and texture.
  3. Add the prepared horseradish, fresh lemon juice, and Worcestershire sauce. Whisk vigorously for 30–60 seconds until the mixture is perfectly smooth and has a slight sheen. Ensure there are no streaks of unblended mayo remaining.
  4. Sprinkle in the paprika, sea salt, black pepper, and the optional pinch of cayenne pepper. Using a rubber spatula, gently fold in the minced chives. Taste Test: Adjust seasoning (salt, lemon juice, or horseradish) if needed.
  5. Transfer the dressing to an airtight container. Refrigerate for a minimum of 30 minutes, but ideally 1 to 2 hours. This chilling time allows the flavors to properly marry. Give it a final stir just before serving.
