Ingredients:

  • 1 lb (450 g) ground beef (80/20 lean)
  • 1/2 lb (225 g) ground pork
  • 1 cup (100 g) breadcrumbs (preferably stale)
  • 1/2 cup (120 ml) whole milk
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/3 cup (80 ml) ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Combine breadcrumbs and milk in a small bowl; let it sit for 5 minutes to soak.
  3. Sauté onions and garlic in a pan with a splash of oil over medium heat until soft; about 5 minutes.
  4. In a large bowl, mix soaked breadcrumbs, sautéed onions and garlic, ground beef, ground pork, eggs, Worcestershire sauce, thyme, oregano, salt, and pepper until well combined.
  5. Shape the mixture into a loaf and place it in the loaf pan.
  6. Prepare the glaze by mixing ketchup, brown sugar, and vinegar in a separate bowl.
  7. Spread the glaze evenly over the top of the meat loaf.
  8. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
  9. Let rest for 10–15 minutes before slicing.
