Ingredients:

  • 6 oz lump crab meat, drained
  • 5 oz Old English Cheddar Cheese Spread, room temperature
  • 0.5 cup unsalted butter, softened
  • 1 tbsp mayonnaise
  • 0.5 tsp garlic powder
  • 0.5 tsp seasoned salt
  • 0.5 tsp lemon juice
  • 6 English Muffins, split into 12 halves

Instructions:

  1. In a medium mixing bowl, cream together the softened butter, Old English cheese spread, mayonnaise, garlic powder, and seasoned salt until the mixture is uniform and pale orange.
  2. Gently fold in the lump crab meat and lemon juice using a rubber spatula, taking care not to break up the crab lumps entirely.
  3. Lay the 12 English muffin halves on a large baking sheet and spread an even layer of the crab mixture over each half, extending to the very edges.
  4. Place the baking sheet in the freezer for 15 minutes. This flash-freeze step ensures the muffins stay crisp and the topping remains stable during broiling.
  5. Adjust the oven rack to the top position and preheat the broiler. Broil the muffins for 3–5 minutes, or until the cheese is bubbling and the tops are a deep mahogany brown. Serve immediately.
