Ingredients:

  • 2 cups cooked rice (preferably short-grain)
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg (plus extra for topping)
  • Pinch of salt
  • 1/2 cup raisins (optional)
  • Whipped cream or vanilla ice cream (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the milk, sugar, eggs, vanilla extract, nutmeg, and salt. Whisk until well combined and smooth.
  3. Stir in the cooked rice until fully coated with the mixture. Add raisins if using, and mix gently.
  4. Pour the rice mixture into a greased 9x9-inch baking dish. Smooth the top evenly with a spatula.
  5. Bake in the preheated oven for 40-45 minutes, or until the pudding is set and the top is lightly golden.
  6. Remove from oven and let cool slightly before serving. Serve warm, garnished with a sprinkle of nutmeg and optional whipped cream.
