Ingredients:
- 2 cups cooked rice (preferably short-grain)
- 2 cups whole milk
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg (plus extra for topping)
- Pinch of salt
- 1/2 cup raisins (optional)
- Whipped cream or vanilla ice cream (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the milk, sugar, eggs, vanilla extract, nutmeg, and salt. Whisk until well combined and smooth.
- Stir in the cooked rice until fully coated with the mixture. Add raisins if using, and mix gently.
- Pour the rice mixture into a greased 9x9-inch baking dish. Smooth the top evenly with a spatula.
- Bake in the preheated oven for 40-45 minutes, or until the pudding is set and the top is lightly golden.
- Remove from oven and let cool slightly before serving. Serve warm, garnished with a sprinkle of nutmeg and optional whipped cream.
