Ingredients:

  • 4 sea bass fillets (about 6 oz each)
  • Salt and pepper, to taste
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tablespoons)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh basil, finely chopped
  • Pinch of red pepper flakes (optional)

Instructions:

  1. In a small bowl, combine lemon zest, lemon juice, olive oil, minced garlic, parsley, basil, and red pepper flakes if using. Whisk until well blended.
  2. Place the sea bass fillets in a shallow dish or resealable plastic bag. Pour the marinade over the fish and ensure all sides are coated. Season with salt and pepper to taste. Cover or seal and refrigerate for at least 30 minutes, but no more than 2 hours for best flavor.
  3. Preheat your grill to medium-high heat (around 400°F/204°C). If youre using a charcoal grill, let it burn until coals are covered in gray ash.
  4. Once preheated, brush the grill grate with oil or spray it lightly with non-stick cooking spray to prevent sticking.
  5. Remove marinated fish from refrigerator while you wait for your grill to heat up; discard any leftover marinade. Place fish skin-side down on the hot grill. Grill for about 5-6 minutes on one side without moving them until they release easily from the grates. Carefully flip each fillet using a spatula and cook for an additional 5-6 minutes on the other side until cooked through and opaque in color.
  6. Remove from grill carefully; transfer to serving plates immediately.
