Ingredients:
- 1 cup plain Greek yogurt
- 3 tbsp fresh lime juice
- 1 tsp lime zest
- 1/2 cup fresh cilantro
- 1 medium garlic clove
- 1/2 tsp ground cumin
- 1/2 tsp fine sea salt
- 2 tbsp water
Instructions:
- Zest the lime first. Note: It's much harder to zest a lime after you've squeezed the juice out.
- Squeeze the lime juice through a fine mesh strainer into a small bowl to remove all seeds.
- Roughly chop the fresh cilantro. Note: Don't worry about precision here; the blender does the work.
- Add the plain Greek yogurt, lime juice, zest, cilantro, garlic, and ground cumin into your blender or food processor.
- Process on high for 30–60 seconds until the sauce is a consistent pale green color.
- Taste the sauce. This is the critical part — every lime varies in acidity.
- Whisk in water one tablespoon at a time until it reaches a drizzle able consistency.
- Add the fine sea salt gradually, tasting after each pinch, to balance the tang of the yogurt.
- Transfer to an airtight container and chill for 30 minutes until the flavors have fully married.
