Ingredients:

  • 1 cup (240g) full-fat sour cream
  • 1/4 cup (60g) mayonnaise
  • 2 cups fresh cilantro, leaves and tender stems
  • 2 medium limes, zested and juiced (approx. 4 tbsp juice)
  • 1 clove garlic, smashed
  • 0.5 tsp kosher salt
  • 0.25 tsp ground cumin

Instructions:

  1. Wash the cilantro thoroughly in cold water and pat it completely dry with a paper towel to ensure the crema stays thick.
  2. Load the blender. Add the sour cream, mayonnaise, garlic, lime juice, lime zest, salt, and cumin. Add the cilantro on top of the liquid mixture. Blend on high for 30–45 seconds until the sauce is completely smooth and a uniform green color.
  3. Transfer the crema to an airtight glass jar or squeeze bottle and refrigerate for at least 15 minutes before serving to allow the flavors to develop and the texture to firm up.
