Ingredients:
- 1/2 cup (75 g) shrimp, peeled and deveined
- 2 cups (480 mL) tomato juice
- 3 medium cucumbers, chopped
- 1 small tomato, chopped
- 2/3 cup (100 g) crab meat, cooked
- 1/2 cup (120 mL) lemon juice, freshly squeezed
Instructions:
- Steam shrimp in a steamer basket for about 5-7 minutes or until they turn pink and opaque. Remove from heat and let cool.
- Pour the tomato juice into a large mixing bowl.
- Chop cucumbers and tomato into bite-sized pieces. Add these to the bowl with the tomato juice.
- Add chopped crab meat into the bowl.
- Soak steamed shrimp in lemon juice for about 5 minutes, then add them to the large bowl along with the lemon juice.
- Mix all ingredients thoroughly, cover the bowl, and refrigerate for about 1 hour or until cold.
