Ingredients:

  • 1/2 cup (75 g) shrimp, peeled and deveined
  • 2 cups (480 mL) tomato juice
  • 3 medium cucumbers, chopped
  • 1 small tomato, chopped
  • 2/3 cup (100 g) crab meat, cooked
  • 1/2 cup (120 mL) lemon juice, freshly squeezed

Instructions:

  1. Steam shrimp in a steamer basket for about 5-7 minutes or until they turn pink and opaque. Remove from heat and let cool.
  2. Pour the tomato juice into a large mixing bowl.
  3. Chop cucumbers and tomato into bite-sized pieces. Add these to the bowl with the tomato juice.
  4. Add chopped crab meat into the bowl.
  5. Soak steamed shrimp in lemon juice for about 5 minutes, then add them to the large bowl along with the lemon juice.
  6. Mix all ingredients thoroughly, cover the bowl, and refrigerate for about 1 hour or until cold.
