Ingredients:
- 120g plain Greek yogurt
- 60g ripe avocado
- 15g fresh parsley
- 8g fresh chives, chopped
- 4g fresh tarragon, chopped
- 15ml fresh lemon juice
- 5ml apple cider vinegar
- 3g garlic, minced
- 3g sea salt
- 1g cracked black pepper
- 450g cooked lobster meat, chilled and chopped
- 20g finely diced celery
- 5g fresh chives, minced
- 5ml lemon juice
- 6 top-split New England style buns
- 42g unsalted butter, softened
Instructions:
- Combine the Greek yogurt, avocado, parsley, chives, tarragon, lemon juice, vinegar, and garlic in a food processor.
- Pulse until the mixture is velvety and a pale, vibrant green. Season with salt and pepper.
- Place the dressing in the refrigerator for 30 minutes to allow the flavors to marry.
- In a large mixing bowl, combine the chilled lobster meat, diced celery, minced chives, and 5ml of lemon juice.
- Gently fold the chilled Green Goddess dressing into the lobster mixture using a silicone spatula to keep the meat intact.
- Butter the sides of the New England style buns and sear in a cast iron skillet or griddle over medium heat until mahogany-colored and crisp.
- Fill the toasted buns with the chilled lobster mixture and serve immediately.
