Ingredients:

  • 1 pound ground beef (preferably lean)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced (about 2 cups)
  • 1 cup beef broth
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese, plus more for garnish
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Optional: 1/4 cup dill pickle relish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  2. Add ground beef to the pot and cook until browned, breaking it apart with a spatula (5-7 minutes). Drain excess fat if necessary.
  3. Stir in diced potatoes, beef broth, Worcestershire sauce, salt, pepper, and smoked paprika. Bring to a boil, then reduce to a simmer. Cover and cook until potatoes are tender (about 15 minutes).
  4. Pour in milk and stir to combine. Gradually add shredded cheddar cheese, stirring until melted and creamy.
  5. Optional: Stir in dill pickle relish. Taste and adjust seasoning as needed.
  6. Ladle chowder into bowls and garnish with additional cheese, chopped green onions, and bacon if desired.
