Ingredients:
- 1 lb jumbo shrimp, peeled and deveined
- 1 lb sea scallops
- 1 lb firm white fish fillets, cut into 3-inch chunks
- 0.5 lb squid rings and tentacles
- 1 lb mussels or clams, scrubbed clean
- 0.5 cup extra virgin olive oil
- 0.25 cup fresh lemon juice
- 4 cloves garlic, minced
- 1 tbsp smoked paprika
- 1 tsp dried oregano
- 1 tsp sea salt
- 0.5 tsp cracked black pepper
- 2 lemons, sliced into rounds
- 0.25 cup fresh parsley, chopped
- 2 tbsp unsalted butter, melted
Instructions:
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, oregano, salt, and pepper.
- Add the shrimp, scallops, fish chunks, and squid to the marinade. Toss gently to coat and let sit at room temperature for 30 minutes.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Place mussels or clams directly on the grill and close the lid for 3–5 minutes until they open.
- Place the fish chunks and scallops (in a grill basket) on the heat. Sear for 3 minutes per side until golden-brown.
- Add the shrimp and squid to the grill, cooking for 2 minutes per side until shrimp curl into a 'C' shape and squid turn opaque.
- Let the seafood rest for one minute, then brush with melted butter.
- Arrange the seafood on a platter with grilled lemon rounds and sprinkle with fresh parsley.
