Ingredients:

  • 1 lb jumbo shrimp, peeled and deveined
  • 1 lb sea scallops
  • 1 lb firm white fish fillets, cut into 3-inch chunks
  • 0.5 lb squid rings and tentacles
  • 1 lb mussels or clams, scrubbed clean
  • 0.5 cup extra virgin olive oil
  • 0.25 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • 0.5 tsp cracked black pepper
  • 2 lemons, sliced into rounds
  • 0.25 cup fresh parsley, chopped
  • 2 tbsp unsalted butter, melted

Instructions:

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, oregano, salt, and pepper.
  2. Add the shrimp, scallops, fish chunks, and squid to the marinade. Toss gently to coat and let sit at room temperature for 30 minutes.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Place mussels or clams directly on the grill and close the lid for 3–5 minutes until they open.
  5. Place the fish chunks and scallops (in a grill basket) on the heat. Sear for 3 minutes per side until golden-brown.
  6. Add the shrimp and squid to the grill, cooking for 2 minutes per side until shrimp curl into a 'C' shape and squid turn opaque.
  7. Let the seafood rest for one minute, then brush with melted butter.
  8. Arrange the seafood on a platter with grilled lemon rounds and sprinkle with fresh parsley.
