Ingredients:
- 1 pound (450g) cooked lobster meat, roughly chopped
- 8 ounces (225g) cooked crab meat, picked through for shells
- 2 tablespoons (30ml) olive oil
- 1 red bell pepper, diced (approximately 1 cup/150g)
- 1 green bell pepper, diced (approximately 1 cup/150g)
- 1 yellow onion, diced (approximately 1 cup/150g)
- 2 cloves garlic, minced
- 2 tablespoons (30ml) Cajun seasoning (store-bought or homemade)
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- Salt and freshly ground black pepper to taste
- 8 tablespoons (113g) unsalted butter
- 1/4 cup (30g) all-purpose flour
- 3 cups (720ml) heavy cream
- 1 cup (120g) freshly grated Parmesan cheese, plus more for serving
- 1/4 teaspoon freshly grated nutmeg
- Salt and freshly ground black pepper to taste
- 1 pound (450g) fettuccine pasta
- Reserved pasta water (approx. 1 cup/240ml)
Instructions:
- Cook fettuccine according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add diced bell peppers and onion and sauté until softened, about 5-7 minutes.
- Stir in minced garlic and Cajun seasoning. Cook for 1 minute, until fragrant.
- Gently fold in the cooked lobster and crab meat. Season with salt, pepper, and cayenne pepper (if using). Cook until heated through, about 2-3 minutes. Be careful not to overcook the seafood.
- In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to create a roux.
- Gradually whisk in heavy cream, ensuring no lumps form. Bring to a simmer, stirring constantly.
- Reduce heat to low and stir in grated Parmesan cheese and nutmeg until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet with the seafood mixture. Toss to combine.
- Gradually add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.
- Serve immediately, garnished with extra Parmesan cheese and a sprinkle of Cajun seasoning (optional).
