Ingredients:

  • 1 pound (454g) large shrimp, peeled and deveined
  • 1 cup (100g) Italian breadcrumbs
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) olive oil, extra virgin
  • 1/4 cup (5g) fresh parsley, finely chopped
  • 2 tablespoons (3g) fresh oregano, finely chopped
  • 1 tablespoon (1g) dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup (60ml) dry white wine (optional)
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat oven to 400°F (200°C). Pat shrimp dry with paper towels.
  2. In a large bowl, combine breadcrumbs, minced garlic, olive oil, parsley, oregano (fresh and dried), red pepper flakes (if using), salt, and pepper. Mix well. Add white wine (if using) and stir.
  3. Add the shrimp to the breadcrumb mixture and toss until each shrimp is thoroughly coated.
  4. Arrange the shrimp in a single layer on a baking sheet. Bake for 12-15 minutes, or until the shrimp are pink and opaque and the breadcrumbs are golden brown.
  5. Serve immediately with lemon wedges for squeezing.
