Ingredients:
- 4 (6 oz / 170g) Yellowfin tuna steaks
- 2 tbsp (30ml) Extra virgin olive oil
- 1 tsp (5g) Coarse sea salt
- 1 tsp (2g) Freshly cracked black pepper
- ½ tsp (1g) Smoked paprika
- ¼ tsp (0.5g) Garlic powder
- 1 tbsp (15ml) Fresh lemon juice
- 1 tbsp (15ml) Melted unsalted butter
- 1 tbsp (15g) Fresh parsley, minced
Instructions:
- Position the oven rack 5 to 6 inches from the broiler element and turn the broiler to high. Place a wire cooling rack inside a baking sheet to allow heat circulation.
- Pat the yellowfin tuna fillets completely dry with paper towels. Rub each steak with olive oil, then evenly coat all sides with salt, pepper, paprika, and garlic powder, pressing the spices into the meat.
- Place the seasoned steaks on the preheated wire rack. Broil for 3 to 4 minutes per side until the exterior is deep brown and caramelized, and the internal temperature reaches 115°F (46°C) for medium-rare.
- Whisk together melted butter and lemon juice. Immediately brush the mixture over the hot steaks, garnish with minced parsley, and let the meat rest for 5 minutes before serving.
