Ingredients:

  • 1.5 lbs Large Sea Scallops
  • 4 tbsp Unsalted Butter, melted
  • 3 cloves Garlic, grated
  • 1 tsp Fresh Lemon Juice
  • 0.5 tsp Kosher Salt
  • 0.25 tsp Freshly Cracked Black Pepper
  • 0.5 tsp Smoked Paprika
  • 2 tbsp Fresh Parsley, finely chopped
  • 4 Lemon Wedges

Instructions:

  1. Remove the small, tough side muscle from the scallops if present. Place the scallops between several layers of paper towels and press firmly. Let them sit for 5 minutes to ensure they are bone-dry.
  2. Preheat your broiler to high. In a small mixing bowl, whisk together the melted butter, grated garlic, fresh lemon juice, kosher salt, and black pepper.
  3. Arrange the dried scallops in a single layer on a large rimmed baking sheet or broiler pan.
  4. Drizzle the garlic butter mixture evenly over the scallops and sprinkle with smoked paprika for color.
  5. Place the pan under the broiler and cook for 4 to 5 minutes until the scallops are opaque throughout and have developed a golden-brown crust.
  6. Remove from the oven, garnish with fresh parsley, and serve immediately with lemon wedges.
