Ingredients:

  • 1 lb cod fillets, cut into 4 equal portions
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder

Instructions:

  1. Pat the cod fillets completely dry with paper towels to ensure the breading adheres and becomes crispy.
  2. Sprinkle both sides of the fillets with salt and black pepper.
  3. Dredge each fillet in the all-purpose flour, shaking off any excess.
  4. Dip the floured fish into the beaten eggs, ensuring every part of the fillet is covered.
  5. Combine panko, garlic powder, paprika, and onion powder in a bowl. Press the fish firmly into the crumb mixture so the panko adheres tightly.
  6. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  7. Lightly grease the air fryer basket with olive oil or use perforated parchment paper.
  8. Place fillets in a single layer, leaving 1 inch of space between them for air circulation.
  9. Air fry for 7–10 minutes, carefully flip the fillets using tongs, and cook for another 5–7 minutes until golden brown and cooked through.
