Ingredients:
- 1 lb cod fillets, cut into 4 equal portions
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp onion powder
Instructions:
- Pat the cod fillets completely dry with paper towels to ensure the breading adheres and becomes crispy.
- Sprinkle both sides of the fillets with salt and black pepper.
- Dredge each fillet in the all-purpose flour, shaking off any excess.
- Dip the floured fish into the beaten eggs, ensuring every part of the fillet is covered.
- Combine panko, garlic powder, paprika, and onion powder in a bowl. Press the fish firmly into the crumb mixture so the panko adheres tightly.
- Preheat the air fryer to 400°F (200°C) for 5 minutes.
- Lightly grease the air fryer basket with olive oil or use perforated parchment paper.
- Place fillets in a single layer, leaving 1 inch of space between them for air circulation.
- Air fry for 7–10 minutes, carefully flip the fillets using tongs, and cook for another 5–7 minutes until golden brown and cooked through.
