Ingredients:
- 3 cups (270g) rolled oats (not instant)
- 1 teaspoon (5g) baking powder
- 1/2 teaspoon (2.5g) ground cinnamon
- 1/4 teaspoon (1.25g) salt
- 2 cups (480ml) milk (dairy or non-dairy)
- 1/2 cup (120ml) maple syrup (or honey)
- 2 large eggs, lightly beaten
- 2 tablespoons (30g) unsalted butter, melted (or coconut oil, melted)
- 1 teaspoon (5ml) vanilla extract
- 2 cups (300g) fresh or frozen blueberries
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large bowl, whisk together oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together milk, maple syrup, eggs, melted butter (or oil), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix!
- Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish.
- Bake for 40-45 minutes, or until golden brown and set. A knife inserted into the center should come out clean.
- Let cool for a few minutes before serving.
