Ingredients:

  • 1.5 lbs (680g) large shrimp, peeled and deveined (about 20-24 shrimp)
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1 teaspoon (5ml) Worcestershire sauce
  • 1 tablespoon (15ml) smoked paprika
  • 1 teaspoon (5ml) garlic powder
  • 1 teaspoon (5ml) onion powder
  • 1/2 teaspoon (2.5ml) cayenne pepper (adjust to taste)
  • 1/2 teaspoon (2.5ml) dried oregano
  • 1/4 teaspoon (1.25ml) black pepper, freshly ground
  • 1/4 teaspoon (1.25ml) salt
  • 1/4 teaspoon (1.25ml) red pepper flakes (optional, for extra heat)

Instructions:

  1. Rinse shrimp and pat dry with paper towels. This ensures better browning.
  2. In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, oregano, black pepper, salt, and red pepper flakes (if using).
  3. In a medium bowl, toss the shrimp with olive oil, lemon juice, and Worcestershire sauce. Then, sprinkle the spice mixture over the shrimp, ensuring they're evenly coated. Marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
  4. Thread 5-6 shrimp onto each skewer.
  5. Preheat your grill to medium-high heat (about 375-400°F or 190-205°C).
  6. Place the skewers on the preheated grill and cook for 3-4 minutes per side, or until the shrimp are pink and opaque and slightly charred. Don't overcook, or they'll become rubbery.
  7. Remove from grill and serve immediately.
