Ingredients:
- 2 tbsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 (6 oz) ahi tuna steaks
- 2 tbsp avocado oil
- 1 tbsp unsalted butter
Instructions:
- Pat the tuna steaks thoroughly dry with paper towels. Note: Moisture creates steam, which prevents the crust from forming.
- Whisk together the smoked paprika, cayenne, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
- Press the tuna steaks firmly into the seasoning mixture on all sides until heavily coated.
- Heat a cast iron skillet over high heat. Add avocado oil and wait until it shimmers and just barely smokes.
- Stir in the butter and let it foam for 10 seconds.
- Lay the tuna steaks in the pan. Sear for 1.5 to 2 minutes per side until a deep, dark crust forms.
- Remove steaks from the pan immediately.
- Rest on a cutting board for 2-3 minutes. Note: This lets the juices redistribute so they don't run out when slicing.
- Slice into 1/2 inch thick strips.
