Ingredients:

  • 2 tbsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 (6 oz) ahi tuna steaks
  • 2 tbsp avocado oil
  • 1 tbsp unsalted butter

Instructions:

  1. Pat the tuna steaks thoroughly dry with paper towels. Note: Moisture creates steam, which prevents the crust from forming.
  2. Whisk together the smoked paprika, cayenne, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
  3. Press the tuna steaks firmly into the seasoning mixture on all sides until heavily coated.
  4. Heat a cast iron skillet over high heat. Add avocado oil and wait until it shimmers and just barely smokes.
  5. Stir in the butter and let it foam for 10 seconds.
  6. Lay the tuna steaks in the pan. Sear for 1.5 to 2 minutes per side until a deep, dark crust forms.
  7. Remove steaks from the pan immediately.
  8. Rest on a cutting board for 2-3 minutes. Note: This lets the juices redistribute so they don't run out when slicing.
  9. Slice into 1/2 inch thick strips.
