Ingredients:
- 2 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 2 (6 oz) grouper fillets
- 3 tbsp unsalted butter, melted
- 1 tbsp avocado oil
- 1 lemon, cut into wedges
Instructions:
- Pat the grouper fillets completely dry with paper towels to ensure a proper crust.
- Combine the smoked paprika, garlic powder, onion powder, kosher salt, dried thyme, dried oregano, cayenne pepper, and black pepper in a small bowl.
- Rub a small amount of the melted butter onto each side of the fillets, then coat them generously with the seasoning blend, pressing the spices firmly into the flesh.
- Place a cast iron skillet over medium-high heat and add the avocado oil and the remaining melted butter.
- Wait until the butter stops foaming and begins to shimmer, then carefully lay the seasoned grouper fillets into the pan.
- Press down lightly with a spatula to ensure full contact with the pan and sear for 3–4 minutes without moving them until a deep, deep golden brown crust forms and the fish releases easily.
- Flip the fillets and cook for another 3–4 minutes until the fish is opaque throughout and reaches an internal temperature of 145°F (63°C).
- Remove from heat and allow the fillets to rest for 2 minutes.
- Top with a squeeze of fresh lemon wedges and serve.
