Ingredients:
- 1 kg (2.2 lbs) Fish Fillet (Cream Dory, Cod, Haddock, or other firm white fish), cut into 1-inch thick strips
- 1 dash Salt (to taste)
- 1 dash Finely Ground Black Pepper (to taste)
- 1 cup (120g) All-Purpose Flour
- 1 package (approximately 1/2 cup) Breading Mix (Panko breadcrumbs preferred)
- 1 can (330ml/11.2 fl oz) Premium Flavored Beer of Choice (Pale Ale or Lager works well)
- As needed: Water (if needed to adjust batter consistency)
- 1 cup (120g) All-Purpose Flour (for dredging)
- 1 kg (2.2 lbs) Frozen French Fries
- As needed: Salt (for seasoning)
- 2 cups (473ml) Cooking Oil (Vegetable, Canola, or Peanut Oil) - Add more as needed.
- 2 Lemons, cut into wedges
- 5 tbsp Mayonnaise
- 1 tbsp Banana Ketchup
Instructions:
- Slice fish fillets into 1-inch thick strips. Rinse and pat dry with paper towels. Season fish with salt and pepper.
- In a bowl, whisk together 1 cup flour, breading mix, and a pinch of salt and pepper. Gradually add beer, whisking until a smooth batter forms. Add water, one tablespoon at a time, if needed to reach desired consistency. Let the batter stand for 15-30 minutes.
- Pour cooking oil into a deep-frying pan to a depth of 2-3 inches. Heat the oil over medium-high heat until it reaches 350-375°F (175-190°C).
- Place 1 cup flour in a plate. Dredge each fish strip in flour, shaking off excess. Dip the floured fish into the beer batter. Carefully lower the battered fish into the hot oil, a few pieces at a time. Fry for 3-4 minutes per side, or until golden brown and cooked through. Remove and drain excess oil.
- Cook the frozen french fries in the same hot oil according to package instructions, until golden brown and crispy. Drain excess oil and season with salt.
- In a small bowl, combine mayonnaise and banana ketchup.
- Arrange beer battered fish and chips on a platter. Serve with lemon wedges and the mayo dip. Enjoy immediately!
