Ingredients:

  • 1 kg (2.2 lbs) Fish Fillet (Cream Dory, Cod, Haddock, or other firm white fish), cut into 1-inch thick strips
  • 1 dash Salt (to taste)
  • 1 dash Finely Ground Black Pepper (to taste)
  • 1 cup (120g) All-Purpose Flour
  • 1 package (approximately 1/2 cup) Breading Mix (Panko breadcrumbs preferred)
  • 1 can (330ml/11.2 fl oz) Premium Flavored Beer of Choice (Pale Ale or Lager works well)
  • As needed: Water (if needed to adjust batter consistency)
  • 1 cup (120g) All-Purpose Flour (for dredging)
  • 1 kg (2.2 lbs) Frozen French Fries
  • As needed: Salt (for seasoning)
  • 2 cups (473ml) Cooking Oil (Vegetable, Canola, or Peanut Oil) - Add more as needed.
  • 2 Lemons, cut into wedges
  • 5 tbsp Mayonnaise
  • 1 tbsp Banana Ketchup

Instructions:

  1. Slice fish fillets into 1-inch thick strips. Rinse and pat dry with paper towels. Season fish with salt and pepper.
  2. In a bowl, whisk together 1 cup flour, breading mix, and a pinch of salt and pepper. Gradually add beer, whisking until a smooth batter forms. Add water, one tablespoon at a time, if needed to reach desired consistency. Let the batter stand for 15-30 minutes.
  3. Pour cooking oil into a deep-frying pan to a depth of 2-3 inches. Heat the oil over medium-high heat until it reaches 350-375°F (175-190°C).
  4. Place 1 cup flour in a plate. Dredge each fish strip in flour, shaking off excess. Dip the floured fish into the beer batter. Carefully lower the battered fish into the hot oil, a few pieces at a time. Fry for 3-4 minutes per side, or until golden brown and cooked through. Remove and drain excess oil.
  5. Cook the frozen french fries in the same hot oil according to package instructions, until golden brown and crispy. Drain excess oil and season with salt.
  6. In a small bowl, combine mayonnaise and banana ketchup.
  7. Arrange beer battered fish and chips on a platter. Serve with lemon wedges and the mayo dip. Enjoy immediately!
