Ingredients:

  • 1.5 lbs fresh whiting fillets
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter, melted
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tbsp fresh parsley, finely chopped
  • 1 lemon, zested and sliced into rounds
  • 1/4 tsp dried oregano

Instructions:

  1. Preheat your oven to 375°F (190°C). Pat the whiting fillets completely dry using paper towels to ensure a flaky texture.
  2. In a small mixing bowl, whisk together the melted butter, olive oil, minced garlic, smoked paprika, dried oregano, sea salt, and black pepper.
  3. Lay the fillets on a parchment-lined baking tray. Brush both sides of the fish generously with the butter mixture. Top each fillet with a lemon slice and a sprinkle of zest.
  4. Bake on the center rack for 10–12 minutes until the flesh is opaque and flakes easily with a fork (internal temperature of 145°F).
  5. Remove from the oven and let rest for 2 minutes. Garnish with fresh parsley and an additional squeeze of lemon juice before serving.
