Ingredients:
- 1.5 lbs fresh whiting fillets
- 2 tbsp extra virgin olive oil
- 2 tbsp unsalted butter, melted
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tbsp fresh parsley, finely chopped
- 1 lemon, zested and sliced into rounds
- 1/4 tsp dried oregano
Instructions:
- Preheat your oven to 375°F (190°C). Pat the whiting fillets completely dry using paper towels to ensure a flaky texture.
- In a small mixing bowl, whisk together the melted butter, olive oil, minced garlic, smoked paprika, dried oregano, sea salt, and black pepper.
- Lay the fillets on a parchment-lined baking tray. Brush both sides of the fish generously with the butter mixture. Top each fillet with a lemon slice and a sprinkle of zest.
- Bake on the center rack for 10–12 minutes until the flesh is opaque and flakes easily with a fork (internal temperature of 145°F).
- Remove from the oven and let rest for 2 minutes. Garnish with fresh parsley and an additional squeeze of lemon juice before serving.
