Ingredients:

  • ½ cup unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 (6 oz) fillets of walleye, skin removed
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Zest of 1 lemon

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine softened butter, parsley, dill, lemon juice, garlic powder, salt, and pepper. Mix until well blended.
  3. Rinse and pat dry the walleye fillets. Drizzle with olive oil and sprinkle paprika and lemon zest.
  4. Place fillets in a baking dish. Spread herb butter evenly on top of each fillet.
  5. Bake in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  6. Garnish with extra fresh herbs, if desired. Serve warm.
