Ingredients:
- ½ cup unsalted butter, softened
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 (6 oz) fillets of walleye, skin removed
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Zest of 1 lemon
Instructions:
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine softened butter, parsley, dill, lemon juice, garlic powder, salt, and pepper. Mix until well blended.
- Rinse and pat dry the walleye fillets. Drizzle with olive oil and sprinkle paprika and lemon zest.
- Place fillets in a baking dish. Spread herb butter evenly on top of each fillet.
- Bake in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Garnish with extra fresh herbs, if desired. Serve warm.
