Ingredients:

  • 12 large sea scallops
  • 2 tablespoons olive oil
  • 1 cup Panko breadcrumbs
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 tablespoon unsalted butter, melted

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sea scallops under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
  3. In a medium bowl, combine Panko breadcrumbs, minced garlic, grated Parmesan cheese, chopped parsley, lemon zest, salt (to taste), and freshly ground black pepper. Drizzle in the melted butter and mix until all ingredients are well combined.
  4. Lightly grease a baking dish or a rimmed baking sheet with olive oil. Place the seasoned scallops on the prepared dish in a single layer.
  5. Evenly distribute the breadcrumb mixture over each scallop, pressing down gently to adhere.
  6. Drizzle any remaining olive oil over the breadcrumb-topped scallops for added flavor and moisture.
  7. Place in preheated oven and bake for about 12–15 minutes or until the topping is golden brown and crispy while ensuring that scallops are opaque and cooked through (internal temperature should reach 130°F/54°C).
  8. Remove from oven, garnish with additional fresh parsley if desired, serve immediately while hot.
