Ingredients:
- 2 sheets nori seaweed
- Sticky rice (cooked, about 1 cup)
- Fresh salmon (cubed, about 8 oz)
- Yum Yum sauce (G Hughes or similar)
- Avocado oil spray
- Avocado (optional, for topping)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Nori: Using kitchen scissors, cut each of the two seaweed sheets into four squares. You will have a total of eight squares.
- Prepare the Salmon: Cut fresh salmon into bite-sized cubes.
- Assemble Sushi Cups: Lightly grease a muffin tin with avocado oil spray. Place one square of nori in each muffin tin cup. Add a spoonful of sticky rice on top of each nori square. Top with cubed salmon.
- Bake: Spray each assembled sushi cup lightly with avocado oil. Bake in the preheated oven for approximately 20 minutes or until the salmon is cooked through and flakes easily.
- Serve & Enjoy: Remove from the oven and drizzle with Yum Yum sauce. Optionally, add sliced avocado on top before serving.
