Ingredients:

  • 2 sheets nori seaweed
  • Sticky rice (cooked, about 1 cup)
  • Fresh salmon (cubed, about 8 oz)
  • Yum Yum sauce (G Hughes or similar)
  • Avocado oil spray
  • Avocado (optional, for topping)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Nori: Using kitchen scissors, cut each of the two seaweed sheets into four squares. You will have a total of eight squares.
  3. Prepare the Salmon: Cut fresh salmon into bite-sized cubes.
  4. Assemble Sushi Cups: Lightly grease a muffin tin with avocado oil spray. Place one square of nori in each muffin tin cup. Add a spoonful of sticky rice on top of each nori square. Top with cubed salmon.
  5. Bake: Spray each assembled sushi cup lightly with avocado oil. Bake in the preheated oven for approximately 20 minutes or until the salmon is cooked through and flakes easily.
  6. Serve & Enjoy: Remove from the oven and drizzle with Yum Yum sauce. Optionally, add sliced avocado on top before serving.
