Ingredients:

  • 8 slices of rye bread, cubed (about 8 oz / 225 g)
  • 2 cups of corned beef, chopped or shredded (about 10 oz / 280 g)
  • 1 cup of sauerkraut, drained (about 8 oz / 225 g)
  • 1 ½ cups of Swiss cheese, shredded (about 6 oz / 170 g)
  • 1 cup of Thousand Island dressing (about 8 oz / 225 g)
  • 4 large eggs
  • 1 ½ cups of milk (about 360 ml)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine cubed rye bread and set aside.
  3. Spread half the bread cubes evenly in the baking dish. Layer with half of the corned beef, sauerkraut, and Swiss cheese. Repeat the layers with the remaining bread, beef, sauerkraut, and cheese.
  4. In a separate bowl, whisk together eggs, milk, and Thousand Island dressing. Season with salt and pepper.
  5. Pour the egg mixture evenly over the layered ingredients in the baking dish.
  6. Cover the dish with aluminum foil and refrigerate for 30 minutes.
  7. Bake uncovered in the preheated oven for 45 minutes or until golden brown and set.
  8. Allow to cool slightly before serving. Garnish with optional caraway seeds.
