Ingredients:

  • 4 Mahi Mahi filets (approx. 6 oz/170g each)
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Smoked Paprika
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Onion Powder
  • 0.5 tsp Sea salt
  • 0.25 tsp Freshly cracked black pepper
  • 1 Lime, sliced into thin rounds
  • 2 cups Fresh pineapple, diced
  • 0.5 cup Red bell pepper, finely diced
  • 0.25 cup Red onion, minced
  • 0.25 cup Fresh cilantro, chopped
  • 1 Jalapeño, seeded and minced
  • 2 tbsp Fresh lime juice
  • 1 tsp Honey

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Pat the Mahi Mahi filets completely dry with paper towels to ensure a proper roast rather than steaming.
  3. Rub each filet with olive oil and then sprinkle the spice blend of paprika, garlic powder, onion powder, salt, and pepper evenly on both sides.
  4. Lay lime slices on your baking sheet in four little nests and place the seasoned filets directly on top of them.
  5. Bake for 12 minutes until the thickest part of the fish is opaque and the edges look slightly golden. The aroma of toasted garlic and warm lime should fill the air.
  6. While the fish is baking, combine diced pineapple, bell pepper, onion, cilantro, jalapeño, lime juice, and honey in a bowl.
  7. Rest and serve. Let the fish sit for 2 mins after pulling it from the oven. Spoon the salsa generously over the top.
