Ingredients:

  • 4 Mahi Mahi Fillets (6 oz / 170g each)
  • 1 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp smoked paprika
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp fresh parsley, finely chopped
  • 1/2 tsp lemon zest

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Use paper towels to pat the mahi mahi fillets extremely dry on all sides to ensure proper seasoning adhesion.
  2. Arrange the fillets on the prepared pan. In a small mixing bowl, whisk together the melted unsalted butter, minced garlic, fresh lemon juice, lemon zest, and chopped parsley.
  3. Brush the fillets generously with the lemon garlic butter mixture. Sprinkle evenly with sea salt, cracked black pepper, and smoked paprika.
  4. Place the pan on the center rack of the oven. Bake for 12–15 minutes until the fish is opaque and firm. For optimal results, use an instant-read thermometer to ensure the internal temperature reaches 145°F (63°C).
