Ingredients:
- 4 Mahi Mahi Fillets (6 oz / 170g each)
- 1 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1/2 tsp smoked paprika
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1 tsp fresh parsley, finely chopped
- 1/2 tsp lemon zest
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Use paper towels to pat the mahi mahi fillets extremely dry on all sides to ensure proper seasoning adhesion.
- Arrange the fillets on the prepared pan. In a small mixing bowl, whisk together the melted unsalted butter, minced garlic, fresh lemon juice, lemon zest, and chopped parsley.
- Brush the fillets generously with the lemon garlic butter mixture. Sprinkle evenly with sea salt, cracked black pepper, and smoked paprika.
- Place the pan on the center rack of the oven. Bake for 12–15 minutes until the fish is opaque and firm. For optimal results, use an instant-read thermometer to ensure the internal temperature reaches 145°F (63°C).
