  • 1/2 lb (227g) Ground Pork (or Italian Sausage, casings removed)
  • 1 cup (100g) Panko Breadcrumbs
  • 1/2 cup (50g) Grated Parmesan Cheese, plus more for serving
  • 1/4 cup (60ml) Milk (Whole or 2% are fine)
  • 2 Large Eggs, lightly beaten
  • 1/4 cup (5g) Fresh Parsley, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried Italian Seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 cup (60ml) Olive Oil, for drizzling

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the milk and eggs.
  3. In a large mixing bowl, combine the ground beef, ground pork (or sausage), panko breadcrumbs, parmesan cheese, parsley, garlic, Italian seasoning, salt, and pepper.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix!
  5. Let the mixture sit for 15 minutes.
  6. Using your hands or a cookie scoop, form the mixture into approximately 1-inch meatballs.
  7. Place the meatballs on the prepared baking sheet, leaving space between each.
  8. Lightly drizzle the meatballs with olive oil.
  9. Bake for 25-30 minutes, or until the meatballs are cooked through and the internal temperature reaches 165°F (74°C). They should be nicely browned.
  10. Serve immediately with your favorite sauce, pasta, or as desired.
