Ingredients:

  • 1.5 lbs fresh halibut fillets, cut into 4 equal portions
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, finely minced
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh dill, finely chopped
  • 0.5 tsp sea salt
  • 0.25 tsp cracked black pepper
  • 1 lemon, sliced into thin rounds
  • 1 tbsp fresh parsley, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). In a small mixing bowl, whisk together the extra virgin olive oil, minced garlic, lemon juice, lemon zest, and chopped dill to create the marinade.
  2. Pat the halibut fillets completely dry with a paper towel to ensure the marinade adheres. Arrange the fillets in a 9x13 inch ceramic or glass baking dish, ensuring they are not touching.
  3. Spoon the lemon-garlic marinade generously over each fillet. Place one thin lemon slice on top of each portion.
  4. Slide the dish onto the center rack of the oven. Bake for 12 minutes, or until an instant-read thermometer reaches an internal temperature of 140°F (60°C). The fish should be just opaque and flake easily.
  5. Remove from the oven and let rest for 3 minutes to allow for carryover cooking. Garnish with fresh parsley before serving.
