Ingredients:
- 1.5 lbs fresh halibut fillets, cut into 4 equal portions
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, finely minced
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tbsp fresh dill, finely chopped
- 0.5 tsp sea salt
- 0.25 tsp cracked black pepper
- 1 lemon, sliced into thin rounds
- 1 tbsp fresh parsley, for garnish
Instructions:
- Preheat your oven to 400°F (200°C). In a small mixing bowl, whisk together the extra virgin olive oil, minced garlic, lemon juice, lemon zest, and chopped dill to create the marinade.
- Pat the halibut fillets completely dry with a paper towel to ensure the marinade adheres. Arrange the fillets in a 9x13 inch ceramic or glass baking dish, ensuring they are not touching.
- Spoon the lemon-garlic marinade generously over each fillet. Place one thin lemon slice on top of each portion.
- Slide the dish onto the center rack of the oven. Bake for 12 minutes, or until an instant-read thermometer reaches an internal temperature of 140°F (60°C). The fish should be just opaque and flake easily.
- Remove from the oven and let rest for 3 minutes to allow for carryover cooking. Garnish with fresh parsley before serving.
