Ingredients:
- 4 (6-ounce/170g) hake fillets, skin on or off
- 1 tablespoon (15 ml) olive oil
- Salt and freshly ground black pepper, to taste
- 1/2 cup (50g) panko breadcrumbs
- 1/4 cup (60ml) grated Parmesan cheese
- 2 tablespoons (30 ml) olive oil
- 1/4 cup (15g) finely chopped fresh parsley
- 2 tablespoons (10g) finely chopped fresh basil
- 1 tablespoon (5g) finely chopped fresh oregano
- 1 clove garlic, minced
- 1 lemon, zested and juiced (about 2 tablespoons juice)
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- Preheat oven to 400°F (200°C).
- Lightly grease the baking dish with olive oil.
- Pat the hake fillets dry with paper towels. Season with salt and pepper. Place in the prepared baking dish.
- In a mixing bowl, combine panko breadcrumbs, Parmesan cheese, olive oil, parsley, basil, oregano, minced garlic, lemon zest, lemon juice, salt, and pepper. Mix well until combined.
- Evenly distribute the lemon-herb crust over the hake fillets, pressing lightly to adhere.
- Bake in the preheated oven for 15-20 minutes, or until the hake is cooked through and the crust is golden brown and crispy. The fish should flake easily with a fork.
- Let the hake rest for a few minutes before serving.
